Vietnamese-Style Rolls

Packed with mint, lime & coriander these paperless rolls make a refreshing tasty snack on a hot day like today. They team beautifully with a caprioska!

Ingredients:
1 butter lettuce
Marinated tofu, sliced
1 carrot, grated
2 shallots, finely chopped
1 handful of mint
1 handful of coriander
1 lime
Rice wine vinegar

Place 2 butter lettuce leaves on top of each other on a board or plate. Place a small handful of grated carrot in the middle, plus shallots, mint, coriander & marinated tofu (you could use chicken or beef instead if you don’t like tofu). Add a good squeeze of fresh lime and a drizzle of rice wine vinegar. Roll up and secure with a toothpick to hold it in place. Yum! Don’t forget to remove the toothpick when eating 🙂
